I was relying on pre-filling forms for a project in Airtable with values. I haven’t found anything in the documentation. Could you please refer me to where I could read about form creation and prefilling values?

It’s currently not possible to prefill form values via the URL query parameters. However, I really like this idea and I’ve created an issue on the backlog (Prefill form values via query parameters (#852) · Issues · Bram Wiepjes / baserow · GitLab). Here you can track the progress.
